2 cups water

1 pound fresh asparagus, trimmed

2 tablespoons balsamic vinegar

1 tablespoon butter, melted

½ teaspoon minced garlic

¼ teaspoon salt

¼ teaspoon black pepper

In a large pan, bring water to a boil. Add asparagus, and boil, uncovered, 4 to 5 minutes or until tender. In a small bowl, whisk together vinegar, butter, garlic, salt, and pepper. Drain asparagus and drizzle with balsamic mixture.

Makes 4 servings.

5-Minute Jell-O Salad

Every Sunday my mom used to make a Jell-O salad. I grew up loving it (especially the green Jell-O with pineapple)! This is my favorite “fast” salad because you don’t have to cook anything, it doesn’t need to set up before you eat it, and it is delicious! —Kristen
